Since 1995 when he opened the 39-seat Metropolis Cafe and 1998 when he opened Aquitaine Bar á Vin Bistrot, Seth Woods has been steadily shaping his Aquitaine Group into a respected local operator of fine-casual restaurants. Growing his brand Woods took on his partners, Matthew Burns and Jeffrey Gates, who together own and operate Aquitaine Chestnut Hill ( 2000) , Aquitaine Dedham ( 2009), Gaslight Brasserie (2008), Union Bar & Grille (2003) and the lunch-only Cafe Green Light (2008).
Chef Dolly Bourommavong, Chef de Cuisine, and General Manager Greg Dickinson first met at the Boston institution, L’Espalier, in 2008 and it was love at first sight. Working side by side for years before moving on to other jobs, they are incredibly happy to be reunited, and they are having a blast creating new menus. Both being from the South, they share an affinity for the home cooking of that region and take joy in bringing it to your plate at Union. They collaborate on dishes and beverage to offer you the best combinations that will at once make you feel at home at Union and introduce you to the finest of seasonal and local products from the bounty of New England.
